Often, an amazing moveset will more than makeup for a deficiency in damage. Loyce Greatsword gets almost no benefit from str and Mastodon Greatsword on the other hand doesn't benefit from dex. I would suggest picking one of them and using a soul vessel to reduce the other stat so it just fulfills the minimum requirement. If you are looking for a good str/dex weapon then I suggest trying Sun Sword.
